Authentic Tamil Nadu Chettinad Poondu Varuval with Steamed Ponni Rice
A fiery and aromatic Chettinad specialty featuring whole garlic cloves roasted in a robust, freshly ground spice masala. This pungent delicacy pairs brilliantly with hot steamed rice and a drizzle of ghee.
Heat sesame oil in a heavy-bottomed pan or traditional earthenware pot over medium heat.
2
Add mustard seeds and cumin seeds, allowing them to splutter and release their fragrance.
3
Add the fresh curry leaves and finely chopped onions, sautéing until the onions turn translucent and golden brown.
4
Stir in the ginger-garlic paste and cook for a minute until the raw aroma disappears.
5
Add the peeled whole garlic cloves and sauté them in the oil for 3 to 4 minutes until slightly softened and fragrant.
6
Toss in the chopped tomatoes and cook until they turn mushy and oil begins to separate from the sides.
7
Sprinkle in the turmeric powder, red chili powder, and freshly ground Chettinad spice powder, mixing well with the masala.
8
Pour in the extracted tamarind water and season with salt, bringing the mixture to a gentle boil.
9
Cover the pan with a lid and simmer on low heat for 12 to 15 minutes, allowing the garlic to absorb the robust gravy and cook through completely.
10
Remove the lid and stir continuously on high heat for another 2 to 3 minutes until the masala thickens to a semi-dry, glossy coating around the garlic cloves.
11
Garnish with freshly chopped coriander leaves and serve hot alongside steaming Ponni rice.
