Knead the whole wheat flour with water and a pinch of salt to form a soft, pliable dough. Cover and let it rest for 20 minutes.

In a mixing bowl, combine sattu, chopped onions, garlic, ginger, green chillies, ajwain, coriander leaves, lemon juice, salt, and mustard oil. Mix well to create a crumbly stuffing.

For the mutton curry, heat mustard oil in a heavy-bottomed pressure cooker, add bay leaves and dry red chillies, then sauté the sliced onions until golden brown.

Add ginger-garlic paste and mutton pieces, searing them well for about 10 minutes until the meat changes color.

Add turmeric, coriander, red chilli powder, and salt. Stir fry the spices with the meat for 5 minutes, add a splash of water, cover, and pressure cook for 5 to 6 whistles until the mutton is tender.

Finish the mutton curry with garam masala and simmer for a few minutes until oil floats on top; set aside.

Divide the rested wheat dough into equal lemon-sized balls, flatten each, and scoop a generous portion of the sattu mixture into the center.

Seal the edges carefully and gently roll out into a thick paratha using a rolling pin and dry flour.

Cook the paratha on a hot tawa, applying ghee on both sides until golden brown spots appear and it puffs up nicely.

Serve the hot, flaky sattu parathas alongside the rich and spicy mutton curry.
